After our jaunt last episode to the home of the Assam Laksa, in Penang Malaysia, this week we return to Thailand – to seek out the ultimate stir fry in Hua Hin.
Hua Hin is the original beach holiday destination in the Gulf of Thailand for over 90 years. With its delightful mix of city and sea, it became known as the playground of the rich and famous including the Thai royal family. It’s here that Brett McGregor, NZ’s original masterchef, is put to work in the kitchen whipping up an authentic Thai family dish – prawns with chilli sauce stir fry.
We also take a trip to the Damnoen Saduak Floating Market, believed to be the most photographed and most famous floating market, located 100 km south-west of Bangkok. We watch as Brett learns from a local market stall holder how to create an authentic Thai chicken stir fry. We learn of a secret ingredient which turns out to be not so secret after all and it’s as simple as adding stock to enhance the dish’s natural flavours and something we Kiwi's can easily do too.
Back in Brett’s kitchen, he adds his own flair and creates not one, but two, stir frys. The Stir Fry Chilli Sauce Egg Noodles with Prawns uses our very own Trident Egg Noodles as well as Trident Hot Sweet Chilli Sauce – which as Brett says, helps give this recipe a good balance of sweet and spicy. The other dish, a Lamb, Basil and Chilli Stir Fry is an even quicker option for those a little more time starved.
