Stir-fried prawns with hokkien noodles and vegetables
Ingredients required for this recipe:
300g raw peeled prawns, tails on (butterfly cut, if you prefer)
1 garlic clove, chopped
1 small piece fresh ginger, chopped
2 teaspoons fish sauce
2 tablespoons oil
2 bok choy, chopped
2 spring onions, sliced
400g frozen (Chinese) Mixed Vegetables
400g Trident Hokkien Noodles (2 x 200g packs)
1/4 cup oyster sauce
Instructions:
Heat oil in the wok and stir-fry prawns with garlic, ginger and Fish Sauce for 1 minute. Set aside on a plate.
Stir-fry bok choy and spring onions for 1 minute.
Return prawns, and add the Chinese Mixed Vegetables and Trident Hokkien Noodles.
Then add the Oyster Sauce and ¼ cup water. Stir-fry for 2 1/2 minutes or until vegetables are heated through.
