Organic Edamame Noodles

Ingredients
  • 1/4 cup freshly squeezed lime juice
  • 2 tbsp Trident sweet chilli sauce
  • 1 tbsp light soy sauce (optional)
  • 1 tsp soft brown sugar
  • 1 tsp sesame oil
  • 1 clove garlic (crushed)
  • 200 g Trident Organic Edamame Noodles
  • 200 g snow peas (trimmed and sliced, blanched)
  • 1-2 Lebanese cucumber (cut into thin strips)
  • 4 spring onions (trimmed and thinly sliced)
  • 2 large handfuls of mung bean sprouts (tails picked)
  • 1 tbsp black sesame seeds
  • 1 handful of coriander leaves
Instructions
  1. To make the dressing, mix together the lime juice, sweet chilli sauce, soy sauce, if using, sugar, sesame oil and garlic.
  2. Cook the noodles in plenty of boiling water for 3 minutes until bite-tender. Drain, then rinse well under cold water. Drain again. Place in a large bowl and drizzle over half of the dressing, tossing to combine.
  3. Layer 4 bowls with the noodles and vegetables. Top each with a little extra dressing, the sesame seeds and coriander leaves.
