- To make the dressing, mix together the lime juice, sweet chilli sauce, soy sauce, if using, sugar, sesame oil and garlic.
- Cook the noodles in plenty of boiling water for 3 minutes until bite-tender. Drain, then rinse well under cold water. Drain again. Place in a large bowl and drizzle over half of the dressing, tossing to combine.
- Layer 4 bowls with the noodles and vegetables. Top each with a little extra dressing, the sesame seeds and coriander leaves.
